I was searching the 'net make sure my facts were straight, and I found this. It's very succinct and just the information you're looking for:

To freeze fresh shrimp, freeze shrimp raw, with shell on, and completely submerged in water! This prevents freezer burn and drying out, and retains flavor and texture. Use heavy-duty freezer bags or Tupperware or any container that will hold water without puncturing. Freeze in amounts that you plan to use for each meal. Raw headless shrimp in the shell maintain quality during freezing longer than frozen, cooked shrimp and are best if frozen at the peak of freshness. Frozen raw shrimp maintains quality for approximately 6-7 months though it can be kept longer, whereas home frozen cooked shrimp begin to lose quality after approximately one month.

To thaw shrimp, run frozen shrimp under cold running water until completely thawed or thaw shrimp in the refrigerator. Never thaw in hot water or at room temperature.

I stopped buying pre-cooked shrimp altogether. Either frozen or defrosted (as it's not raw anymore and certainly not fresh either) I kept not getting the right taste out of them with any of my recipes. So I buy Raw and cook them with the kind of recipe in mind. IE: if making a shrimp scampi, add some lemon and garlic and cook with a small tab of butter till pink, shells on; if making a soup, remove shells, devein and place in pot of boiling or simmering liquid - they only need about a minute to cook! Either way, don't buy frozen shrimp rings - they may appear cheaper, but you're really paying for the packaging!

Love shrimps. Maybe it's even an addiction.
THe fresh ones right from the boat are the best but for that I have to drive 30 miles and I'm not always in the mood :)

Make sure if they have the shells on to peel them, you can make stock for soup or other recipes. Place them on a cookie sheet lined with plastic wrap, and freeze them individually, when solid remove them to a Ziplok bag, this way you can use a bit at a time and this saves defrosting
the whole amount.

When I was a chef I like them just with lots of garlic, lemon juice, butter and parsley, sauted. If your into spicy food, Cajun, Chinese or Thai cuisines have alot of different styles of preparing them, just a simple shrimp cocktail is nice, just one bit of advice, don't overcook them, they tend to keep cooking after you take them off the stove, I recommend 3-5 minutes depending on your prefered recipe.

Broil shrimp with butter, garlic powder, & black pepper. Serve w/ French Bread & butter.

Next Recipe:

Sautee diced onions, chopped celery, & chopped bell pepper in butter in large skillet. When soft add fresh shrimp, cook on medium heat. When shrimp is done cut heat on low, add can of Cream of mushroom soup, stir, add water to thin if needed.

Serve over white rice.

in a zip lock bag filled with water is the best way i know to freeze any type of fish (seafood), and it will generaly stay fresh for about 6 months
