My girlfriend says that serving a big plate of pasta with sauce ladled on the center is an Italian American thing that Italians in Italy don't do. She is a foodie, I am a guy that likes food. Is she just being pretentious? I think that normal people in Italy probably serve pasta just the way my Grandma did here? Who is right?

When I visited Italy, I sometimes got my sauce under the pasta, and sometimes it was in a puddle on top, and other times they had mixed it a bit before I got it at my table.

It really depends on the Chef. :)

Mostly pasta is tossed with the sauce, not just sitting on top like a puddle. A pasta with seafood has the seafood throughout, over and under, with a little extra sauce on top. [side note: Italian seafood with pasta NEVER is cheesed - they think only gauche persons do that!] Also, your 'foodie' gf should know not to call it 'spaghetti' unless that's the specific pasta she means; generically it's called 'pasta' and there are thousands of different kinds. It's like talking about cars in general but calling them all 'Fords'.

Italians mix the pasta and sauce together, Americans ladle it over the top

In Italy we actually mix the pasta with the sauce, it is never served on top of the pasta.

Actually they don't serve it that way. They use a lot of vegetables and cheese sauces. The tomato is American by origin by the way. So 'italian style pizza' is actually an american thing.

mix it in the pasta, then serve extra sauce on the side, I usually like extra sauce on top, I like my pasta really wet with a ton of sauce to dunk garlic bread in.

Well how else would spaghetti be served? I highly doubt the Italians dip their spaghetti noodles in a cup of sauce on the side of their plate........

Lydia (the Italian chef on PBS) always mixes her sauce in and she's pretty darn authentic.
