Well since there is rice already in the stuffed pepper, try garlic bread, foccacia bread (very good with it), or a whole wheat dinner roll. Fruit salad is also very good with stuffed peppers. The flavors of the fruits bring out the flavor and textures of the steamed tomatoes. My mother makes stuffed peppers about one a week, and we always have a big bowl of fresh fruit salad with it. Even canned peaches taste great with the tomato juices of the stuffed pepper.

Any sort of potato and a salad.
I would like to share my recipe for stuffed peppers with you.
4 LARGE peppers
1.5 pounds of ground meat, veal and pork mix
some cooked rice
1 small onion, minced
salt and pepper
1 tablespoon garlic powder and onion powder
2 cans tomato soup, plus 2 cans water
Mix everything but the soup, water and peppers (obviously), stuff the peppers, mix the soup and water, pour over the mixture. Put in a deep bakign pan and cover. Put into a 350 degree oven and baste every 30 minutes....the sauce with thicken with time. Cook for about 1 hour at 350 then turn to 300 and cook another 1.5 hours.

brown rice would be very good! if you are having spicy stuffed peppers, i would suggest somethign that would help tone out the hot flavors like a simple pasta dish i like to get bowtie pasta with a lil olive oil and parsley with some garlic salt,simple and delicious!

I agree with all the others, a nice salad (caesar maybe?)...we always have fresh cut fruit with dinner, so I'd say some fresh fruit! Maybe while the oven is already on, toss some rolls in too!

Mashed potatoes, and make sure you have plenty of tomato gravy to spoon over them. Then all you need is a salad with a nice light dressing.

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.
