Recipe for No-Bake Chocolate Cheesecake
Graham cracker crust in 9″ pie pan (I usually buy this already made.)
8 oz Semi-sweet baking chocolate, broken into pieces
9 oz cream cheese, softened (I get it out of the fridge about half an hour before I plan on fixing it and it’s usually soft enough by then.)
1/4 cup sugar
1/4 cup butter, softened
1 teaspoon vanilla
1 cup cold whipping cream (actually, I take the short cut and buy a tub of already whipped cream and use a little over half of an 8 oz tub.)
Beat cream cheese, butter, sugar, and vanilla in large bowl until smooth.
Place chocolate in microwave-safe bowl and heat on high for a minute or so until it is melted. Let it cool slightly, but not too long.
Add chocolate to the cream cheese mixture. Beat on low speed.
Beat whipping cream in small bowl until stiff (or in my case, just take it straight of the refrigerator.) Fold into cream cheese mixture.
Pour into graham cracker crust. Cover and refrigerate until firm.
It tastes a bit like a French Silk cheese cake… or so I think. My sister really enjoyed it and I think I gave my mom this recipe as well, but I don’t remember. I have another cheese cake recipe (Peanut butter chocolate) that I use and I may have given that to her. It is one that requires baking.

If you make cheesecake from scratch, it is baked. If you buy the kit at the grocery store, it's just chilled. I used to work at Fazoli's, so I know all about the delicious cheesecake they have there. The Turtle Cheesecake is the best!

Pina Colada Cheesecake
Crust:
1 1/3 cup graham cracker crumbs
1/2 cup coconut
1/4 cup unsalted butter, melted
Filling:
24 ounces cream cheese, softened
14 oz can condensed milk
2 tablespoons cornstarch
4 eggs
1 tsp. rum extract or to taste
1 (3 oz.) can flaked coconut
1 (20 oz.) can crushed, pineapple, well drained
Preheat oven to 425 F.
Combine graham crumbs, coconut, and butter, press firmly on bottom and 1 inch up sides of 9-inch cheesecake pan. Refrigerate.
In a large mixer bowl, beat cream cheese until fluffy. Gradually beat in condensed milk until smooth. Add eggs, add cornstarch. Place rum and coconut in blender and blend. Add to cheese mixture with drained pineapple. Pour into pan.
Place pan in oven, reduce the temperature to 325 F and bake for one hour. Turn off oven and leave inside for 1 hour. Do not open oven door!!
Chill overnight before removing from pan.
