dip the chicken in buttermilk mixed with 1 egg and salt and pepper. Then batter it in your flour and DO NOT SHAKE EXCESS OFF!! This will give you really crispy fried chicken...just be careful to cook on medium...you dont want the crust to get done before the chicken does!! LOL

Another hint to keep your batter from coming off.....do not touch the chicken until it done if you deep frying....or dont touch it except to turn in a skillet. The more you disturb it, the more likely your batter will flake off.

Cut all the fat off of the chicken. Cut into strips about 3/4 inches wide. If the chicken is really thick, Slice in half. Place in a wash of 3 parts buttermilk, one part water. Cover and let soak in wash for about an hour. Get some good chicken breader (house-autry makes a good one). Remove chicken from wash and roll around in breader until coated. Drop into deep-fryer on about 350 degrees. Cook until tenders are golden brown. Make sure to cut open the biggest piece and make sure there is no pink in the middle. Drain on paper towels.

Dip chicken in a beated egg then coat with bisquick. I usually add pepper and garlic powder to the bisquick for more flavor. Be careful when frying not to over cook.

Try bread crumbs of your choice, salt, pepper and crushed pecans.

Also try bread crumbs of your choice, salt, pepper, parm cheese, chili flakes, smashed and chopped garlic.

Both make excellent coatings that you can either shallow or deep fry. They are versatile and can go on a sandwich with pasta or on a salad.
