LEFTOVER ROAST BEEF SALAD
1 c. finely chopped roast beef
1/2 c. diced celery
1 green onion, minced
1/4 to 1/2 c. diced Cheddar, Swiss or Monterey Jack cheese
1/4 c. mayonnaise
2 tsp. sweet pickle relish or 1 sm. dill pickle, finely chopped
1/2 tsp. prepared horseradish (optional)
2 tbsp. catsup
1/4 tsp. salt
Few grains pepper
Mix all ingredients together. Serve on lettuce leaf or between bread slices.
BAR-B-QUE BEEFS
1/2 c. ketchup
1/2 c. water
1 tsp. chili powder
1/2 tsp. Worcestershire sauce
1/8 c. brown sugar
1 tsp. dried mustard
Leftover roast beef
Mix first 6 ingredients and cook for 10 minutes. Add cut up, leftover roast beef. Heat and serve on buns.

When I have leftover roast, I cook 1/2 lb of accini de peppi (very small pasta balls, called by some, pastina). While these are cooking, I cut up the meat, carrots,onions, and potatoes into bite-sized pieces and put into a 4-6 qt pot. Add some chicken broth, any left-over broth from the roast, and one small can of tomato paste. Stir well, adding some water,and,if there wasn't alot of broth from the roast, some beef buillion.Then I throw in some garlic powder and some basil and/or oregano. Drain the pasta when it's done and add to the sauce. Great tasting soup!

Make "Shepards Pie"
Take all of the beef roast ingredients (beef, carrots, onions, etc...) and cut them into small pieces. Place all of the ingredients in a well greased baking pan and cover with the gravy. Cover the entire mixture with mashed potatoes. Take a fork and rake it through the mashed potatoes creating a design. Then, bake it for 45 min. to 1 hr. (covered with foil) at 350 degrees. Then, run it under the broiler for a few minutes to brown the top.

i usually make tacos, or burritos ... taco= warm up the pan of oil and while waiting warm up a few corn tortillas and place some meat in it, (i use tooth picks to hold it closed in half) throw it in the oil drain and cool it and place cheese, shredded lettuce and diced tomatoes, ....burritos= everything in it i also make machalca for breakfast = you just warm up the meat and scramble some eggs and through it over the meat and cook it till all the egg is done, ,
my sister throws BBQ sauce on it and puts it on buns and makes a BBQ beef sandwiches

Slice thin and slide into a pan of either home made or store bought gravy. Serve over noodles or toasted bread. Yum.

I USUALLY JUST PUT THE ROAST IN THE SLOW COOKER AND SET IT ON HIGH..COOK FOR ABOUT 3 HOURS AND ADD ONIONS, BABY CARROTS, AND SMALL POTATOES. LEAVE THE CARROTS WHOLE. ADD PEPPER AND ANY OTHER SEASONINGS..I LIKE TO SPRINKLE PARSLEY ON TOP. AND THEN COOK FOR A FEW MORE HOURS JUST CHECK IT EVERY SO OFTERN TO MAKE SURE ITS OK..O AND DONT FORGET TO PUT ABOUT AN INCH OF WATER IN THE BOTTOM OF THE SLOW COOKER SO YOU DONT SCORCH THE BEEF.WHEN ITS DONE REMOVE THE MEAT AND VEGGIES AND USE THE BROTH TO MAKE GRAVY. MAKE SURE THE LID IS ALSO ON THE COOKER.
