I have a crate of blueberries and want to make something other than jam or a pie. I'm leaning towards blueberry crisp but don't know which of the recipes out there are good. Can you recommend one you've tried?

Or any other recipe you've liked that has blueberries as the main ingredient?

This recipe was given to me by my mom. I have taken it to many potlucks and always leave with an empty pan.


Blueberry Delight

2 cups graham cracker crumbs
1/2 cup sifted powdered sugar
1 cup finely chopped pecans
1/2 cup butter or margarine, melted
1 (8 ounce) package cream cheese, softened
1 cup sugar
2 large eggs
2 tablespoons lemon juice
1 (21 ounce) can blueberry pie filling
1 (12 ounce) container frozen whipped topping, thawed

Combine first 3 ingredients; add butter, stirring well.
Press into a greased oblong pan.
Beat cream cheese at medium speed with an electric mixer until smooth.
Add 1 c.
sugar, eggs, and lemon juice, mixing until smooth.
Spread over crust.
Bake at 350 degrees for 25 minutes or until set; cool completely.
Spread pie filling over cream cheese mixture; spread whipped topping over filling.
Cover and chill several hours.

"A very easy and delicious dessert recipe that can be used with blueberries, peaches, apples or most any other of this type fruit. After it cooks it has a beautiful crust on top. The sugar may be adjusted to suit your taste."

Ingredients:

2 cups blueberries
1/4 cup margarine, softened
3/4 cup white sugar
1 cup self-rising flour
1/2 cup milk
3/4 cup white sugar
1 tablespoon cornstarch
1/4 teaspoon ground nutmeg
1 cup boiling water


Directions:

1 Preheat the oven to 350 degrees F (175 degrees C).

2 Place the blueberries into an 8x8 inch square baking dish. In a medium bowl, cream together the margarine and 3/4 cup sugar until smooth. Stir the flour into the creamed mixture alternately with the milk. Spoon batter over blueberries. Mix together the remaining 3/4 cup sugar with the cornstarch and nutmeg. Sprinkle over the top. Pour boiling water over the whole thing.

3 Bake for 1 hour in the preheated oven. Cool for at least 10 minutes to set. Serve with whipped topping or vanilla ice cream.

1/2 cup mayonnaise

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
Place the blueberries into an 8 inch square baking dish. In a medium bowl, stir together the flour, sugar, and cinnamon. Stir in the mayonnaise until the mixture resembles coarse crumbs. Sprinkle over the top of the berries.
Bake for 35 to 40 minutes in the preheated oven, until the top is lightly browned.

same as apple crisp only eliminate the cinnamon and replace the apples with blueberries and 1/2 cu water and 1/4 cu sugar
try 1/4 tsp nutmeg in the "crisp" part
Could itd get any easier for you?
