Perhaps you are thinking about chicken sashimi, or thinly sliced raw chicken. Turkey sashimi was prepared as a dish on the Iron Chef cooking show, and I've had ostrich sashimi at a restaurant which wasn't terribly bad, not terribly good either, but the dipping sauce was tasty. It's almost no different than eating steak tartare (raw steak, lightly seared), or seared tuna steak. Whatever meat you choose to "sashimi," it's a case of salmonella poisoning (with raw poultry) just waiting to happen. The standard of using the freshest and highest-quality fish is used for seafood sashimi, the standard would be similiar, of not tougher, for poultry "sashimi." You're better off eating it in a restaurant then preparing it at home.

I've heard of steak... even spam in sushi... but not chicken, but that doesn't mean it cant be done.
The word "sushi" applies only to the rice, not whatever else is in it.
The raw fish is called sashimi.
and for all those that are talking about all the diseases you can get from uncooked meat... cooked meat is used in sushi rolls that have pork, steak, or chicken

there's a uncooked chicken sashimi in japan. That being stated I wouldnt touch an american raised chicken on of venture. the opportunity of salmonella, even whether it rather is low, remains to super and salmonella would be deadly. no longer until eventually i in my opinion raised the chicken myself and had it examined at a clever lab might I even evaluate ingesting it uncooked. Even uncooked fish could be flash frozen in case you have any problems with anasikiasis. Thats the nasty parasite that lives in some fish and could make your existence greater beneficial than depressing. i admire sushi, yet in basic terms from a sturdy sushi place. and not chicken.

Chicken should not be used for sushi. Sushi is normally raw fish. If your fish is really fresh, then it is safe to use. But even fresh raw chicken has a bigger risk for disease. I would not suggest chicken for making sushi. Stick to fish.

contrary to my misinformed friend above, sushi only has to have the pickled/vinegar sticky sushi rice.
You would definitely want to use cooked chicken, certainly.
I would use strips of roasted chicken in with avacado, cucumber, and bacon, rolled inside-out.
I would say just experiment with various types of vegetables, and other regular sushi roll ingredients like carrots, sprouts, cream cheese, etc. until you find a combination that works for you.
There's a Sushi Roll place near me that has one called the "Kentucky Roll" that puts chicken in with a traditional California Roll. I haven't had it, but they say it's popular.

defrost chicken and let sit at outside tempreture for 1-3 hours uncovered better if left outdoors during this time for maximum bacterial exposure then bring in and sliceraw chicken against grain serve with rice and seaweed wrap wait 4hours then head to hospital
