why is it that all the sodium hydroxide reacts first followed by the sodium carbonate? is it because the dissociation of sodium hydroxide blocks the dissociation of the weaker base, sodium carbonate, due to common ion effect, sodium ions being the common ion?

My assignment is to find chemical additives in normal household products and to determine the structual and functional nature of each chemical and why the compund might be added to the product. These are the products I picked....

I think I did it wrong. For example, for Na4P2O7 (marshmallow) , i wrote that its used as a bufferinf agent, an emulsifier, and a thickening agent and is often used as a food additive. I think that I am supposed to say exactly what reacts with what or bonds with what to do this etc. Do you have any idea how to answer for any of the compounds i listed? I dont! PLease help!
